Baked Ricotta with Sauteed Peaches

The best thing about having a husband that is at home while I have to go to work is that I get to send him emails telling him to start preparing our ricotta at least 2 hours before I come home.  I’m not going to lie — its ridiculously easy to make ricotta.  As for whether it tastes better having made it from scratch… I guess it depends where you shop.  David has always insisted that ricotta is the worst cheese in the world (he was extremely reluctant to make it… kind of like asking him to make onion rings) but ours (his=ours) was fluffy and almost sweet and ridiculously good. I am not sure how much of that was flavoured by the fact I was done working for the week and we drank a bottle of wine but I LOVE RICOTTA!  We are having ricotta two ways — two Gordon Ramsay recipes actually.  We made a ridiculously good Pumpkin and Ricotta Salad (remnants of David’s Real Pumpkin Pie) and we prepared Baked Ricotta with Sauteed Peaches for desert.
