BBQ Chipotle Beef with Fried Tofu Salad

We eat a lot of salad; this is especially true since moving down into the hot tex-mex heat. Most of the time we have salad as a side dish simply to ensure we eat at least one green vegetable for the day. Usually our side salads just consist of lettuce, cucumber and a homemade vinaigrette of some sort, but this gets old fast and its no fun eating the same crap every day. As a result, I’ve been requesting Nicole pick some fancier salad recipes (she handles our menu planning, but i like to complain when I can). All I was hoping for was some pecans in my salad or maybe some cheese, but things have worked out for the better. Lately we’ve been eating a wide variety of bean salads, chickpea salads, and some nice remnants from Nicole’s eights years of being a vegetarian, such as this fried tofu salad.

      I stumbled across your blog via a friend of a friend of a friend and I couldn’t be more enamored. Y’all seem like such fun! I’m bummed out though because I don’t have a computer, just my iPhone and all of your videos that aren’t QuickTime or YouTube don’t work *wahhhh*
