Chayote

Sauteed Chayote with Crispy Shrimp Burgers
This week we decided to try Chayotes, which you can always find at grocery stores in Laredo. They’re either imported from Costa Rica or Mexico and I’ve always liked how they kind of look like the wrinkled lips of an old person. Chayotes are in in the gourd family (like squash, melons, etc…) and you can eat them both raw or cooked, so we decided to try both. When eaten raw it has a crisp bite to it, similar to an apple and taste wise it’s pretty mild, like a mix between cucumber and a slightly sweet squash or melon. We cooked it by blanching and then sautéing in butter, which was very tasty, but we also liked it raw in a slaw. All in all, Chayotes are good and we’ll definitely be buying them again.

These are known as chokoes in australia – my grandmother usedto have a vine in her backyard. Great for stewing, or making chutneys with!!
We call it ‘sayote’ here in the Philippines. And usually an ingredient in ‘Tinola’, a native chicken recipe here in my country.
