Cow Tongue Tacos

Offal, Videos — By Nicole on December 13, 2008

Our next weird cow part is the tongue!  It is also available EVERYWHERE in Laredo and when you see it that often the greyish blue phallic looking thing starts to be irresistible.  We had only ever eaten cow tongue once before, in a Korean restaurant in New York.  There it was served thinly sliced and cold, kinda like spongy lunch meat.  We decided to stick with Mexican flavours and it turned out very nicely.  We would both definitely prepare cow tongue again, although I didn’t care so much for the heavy tomato sauce.  Next time I think I would want to try braising it, slicing, seasoning it, and then grilling it so it becomes smokey and then squeezing with lime and then serving it in a hot fresh tortilla with some fresh salsa and guacamole… sounds good right?

Blue tongue: can you include that in your purple foods? Bryan says: “tongue in cheek”

I think that you are purposefully antagonizing all the vegetarians out there. I’m not so sure anymore if I’m looking forward to your cooking nights at home over the holiday ;-)

Whatever gave you the idea that I wasn’t a wimpy eater? I’m as mainstream as hummus and pad Thai. Besides, I know that you still secretly want to be at the kiddie table…with all the little cutlery. See you on Saturday!

Hey guys, I really enjoyed your site. You know, people laugh at me because I’m not afraid of eating weird things hehehe… Well, for me, taste is everything, and there are so many flavours and textures to take delight…
I always loved cow’s tongue. It is delicious, although most of my friends say “ewww” when I say I love it eheheh
Try chicken heart prepared as barbacue, it is traditional here in the south of Brazil. Yummy!

I think people who don’t want to at least try cow tongue and other “offal” are the weird ones :) People eat just as strange sounding things like diaphragms (Skirt Steak), stomach muscles (Flank Steak) etc all the time… no reason not to eat all of the other parts too! Not to mention hot dogs and other mystery meats, which most likey contain all the cuts of meat many people think of as gross.

  17. GJ Winkel says:

    Nice experiment,

last time i made beef tongue at home was years ago. It’s actually very popular in belgium, where it’s boiled first and grilled afterwards. It’s served like steak with a sauce and french fries.

But if you ate all of it, you have also finished part of the throat which was still on it when it was raw. That part should be removed at the same time as you remove the tongue’s skin, although it’s edible for sure.

Going to give this a try soon, thanks for the inspiration! Grtz,

    GJ
