Accidental Sausage

When David and I were shopping for tripe a week or so ago, we originally walked out of the grocery store with ‘tripas’.  When we returned home and opened the package we did not discover the cow stomach we were anticipating. It turns out that tripas is Spanish for cow intestine, which we now possessed a few meters of.  At the time, not being fully aware of the options cow intestine cookery can offer, we opted to make sausage. Please note that most sausage is made with pork intestine because it is smaller, thinner, and infinitely more manageable (according to rumour).  Its every little girl’s dream to make her own sausage; however, I had been planning to wait until we had a KitchenAid with a meat grinder and sausage making attachment… The dream did not include helping David ram raw meat down slimy intestines with a couple wooden spoons for an interminable length of time. So our sausage making is a bit primitive –  the good news is that it pretty much destroys everybody else’s sausage in the whole world with its tastiness!!!  The secret (other than using beef intestines, duh) is a healthy amount of bacon ground in to mixture.  Please also note that according to me, after making sausage only once, I now hold sausage making secrets.

    Just curious, how was the eggplant seasoned before/after grilling it?

    We drizzled on some olive oil and then sprinkled on some sea salt, cracked pepper, and fresh rosemary. I like grilled eggplant with tart sauces like yogurt with lemon and tahini. Yumm!!!!

    Ooh, eggplant is killer on grill!

    What you could do is place whole eggplants, tomatoes and green peppers on the grill, cook them nicely for some time, then slice the skin off from the eggplants and cut off the insides. Cut up the other vegetables and put them into a bowl.
    Salt, pepper. Yum.
