Cooking Crawfish for the first time

Its pretty rare to see any fresh, let alone living, seafood in Laredo Texas grocery stores. So, when we randomly spotted live Crawfish (Crayfish, Crawdads, or whatever you prefer to call them) we couldn’t resist buying the little guys for a Louisiana style Crawfish Boil.

      Haha thanks for checking out our videos and not getting turned off by our meat devouring ways! I was a vegetarian for 8 years…as you can see I kinda got turned around on that! To me it wasn’t that big of a step though–definitely a connection (haha at least in my mind) between abstaining from meat for conscientious reasons and eating every part of an animal including the undesirable bits so that there is no waste. David and I are on the ‘hurray for organic meat/local/small farmers team’ although to be honest that’s a huge challenge where we live now…sigh…

    A little tip from a native Louisianian: crawfish are usually cooked (and eaten) outside, which helps with the fumes thing. There is a picture of the usual set up here: http://www.astrangebird.net/2009/04/family-crawfish-boil/

    Being able to cook outside pretty much all year is one of the advantages of living this far south (which I am sure you have discovered). We have even been known to fry fish or chicken outside which has the advantage of not heating up the whole house and keeping all the grease and smells outside. :)

    Also, that pot would make a great gumbo pot. ;)

      We dipped some of them in butter, but you don’t really need it because of all the spices and seasoning in the boiling liquid.

    Great website! How did you guys end up in Laredo, TX? My wife and I live in Austin, but we know some Canadians. =)

    I was born in New Orleans and grew up in Southeast Texas (very close to Louisiana). Few notes on crawfish: as mentioned above, you’re supposed to cook them outside. Also, add potatoes and corn to your pot to make it a rounded meal. As you noticed, you will need to cook a LOT more if you want to fill up. And finally, try sucking the heads for the ultimate flavor burst!
