Homemade Beef Jerky

One thing that us Canadians can’t wrap our heads around is the amount of sugar in American food. We’re not talking about desserts — we’re referring to average prepared foods like bread, crackers, ham, jerky, etc. Sick of all the sweetness we decided to try making our own beef jerky following a Rick Bayless recipe. Our Eye of Round Beef worked remarkably well and the process is ridiculously easy and fun (in a waiting 2 days for dehydrated meat kind of way).

    I’ve got to try this myself. Every once and a while I buy beef jerky cuz I like the concept of chewing on it as a snack but I never like the taste. Thanks for the inspiration.

    You should try it! Haha everyone should try it! The only tricky part is when you have to cut the meat and its really not necessary to keep it in one long strip — we just thought it was kinda neat that way.

    Question: Do you need a certain cut of meat? And you don’t have to cook it?

    The cut is called ‘Eye of Round’ — its inexpensive and really lean. The salt and lime help cure the meat and then the air and sun do the rest so no actual heat is involved.

    If you were to want to speed up the process, Alton Brown showed the world how to use box fans to make perfect jerky. Turns out the cold moving air is better than heated air for drying out the meat.

    If you want that smokey flavor, I suggest using LIQUID SMOKE. It comes in 8 zo bottles or more and it gives you that smokey flavor without all the work. Cool right?

    What is the recipe of the marinade you used?

      It wasn’t that precise actually because I think we ran out of the marinade about 2/3 of the way through so we just threw in some more of the ingredients. The recipe was roughly as follows: the juice of 1 lime, 1 or 2 tbsp kosher salt, 1/2 tsp ground ancho chili, and a sprinkle of oregano. It was tasty but kind of an unusual flavour so I think we will experiment with something different next time.

    i noticed that you guys didn’t cook the meat after it dried–is that safe? not doubting, just wondering! :) so cool, thanks for the video–i love the part where he cuts it into one long piece. :)
